Scandinavian Frittata


1 cup chopped onion

3 tbsp butter

Salt and pepper

3 cups leftover baked or roasted potatoes, cut into 1/2 inch pieces

8 oz fresh spinach

2 Lakewinds housemade Swedish Potato sausages, browned and sliced

8 eggs, beaten

4 oz Havarti cheese, shredded


In a 10” cast iron skillet, sautО onion in butter 5 minutes. Add potatoes, season with salt and pepper and cook 5 more minutes. Add spinach and a tablespoon of water, cover and cook until spinach is wilted about 5 minutes. Stir to combine. Add sausage, then pour egg mixture over all. Add shredded cheese, pressing down with a spoon. Bake in a 350° oven for 20-25 minutes until eggs are set and the top is lightly browned.
