Watermelon Tomato Agua Fresca

Yield 6 servings


  • 8 cups cubed watermelon
  • 1 pound ripe medium tomatoes, halved and cored
  • ¼ cup chopped fresh mint
  • ¼ cup fresh lime juice
  • Pinch of salt
  • 2 cups cold water
  • Tomato slice, watermelon wedge and mint sprig, if desired


In a blender, puree watermelon, tomatoes, mint,  lime juice and a pinch of salt until very smooth, 2 to 3 minutes. Strain into a pitcher, pressing on solids with a spatula to release liquid. Stir in 2 cups cold water. Refrigerate until well chilled, about 2 hours.

Serve over ice garnished with tomato, watermelon and a sprig of mint.
