Fried Cauliflower Rice

It may look and taste like rice, but this take on fried rice is made with cauliflower! Just grab a pre-made container of cauliflower rice from our deli and you’re on your way to a deliciously simple dinner that not only is it healthy, but doesn’t take 20 or 30 minutes for your rice to cook through, which means this is a perfect meal for busy weeknights.

Ingredients

  • 1 package cauliflower rice (about 2 cups)
  • 2 Tablespoons grapeseed, peanut, or safflower oil
  • ½ bag frozen mixed vegetables
  • ¼ cup chopped scallions
  • 1 Tablespoon tamari or soy sauce
  • 3 eggs, beaten
  • 1 Tablespoon oil

Instructions

In large skillet or wok heat oil over medium high heat.

Once the heat is shimmering, add the cauliflower rice stir fry for 3 minutes.

Add frozen vegetables and scallions and stir fry for 2 more minutes. Add soy sauce and toss to combine.

Turn heat down to medium. Make a well in the center of the rice. Add remaining oil then the unbeaten eggs into the well.

Scramble the eggs until almost set, then fold in the rice and vegetables.

Notes

To elevate flavor, add seasonings like garlic, ginger, rice vinegar or chili paste.  Finish with a dash of toasted sesame oil.  Vegetables can vary as well – anything you have to use up – peppers, broccoli, bean sprouts, peas, shredded carrots or brussels sprouts.  Want more protein?  Chicken, beef, shrimp, pork or tofu all make great additions!
