Apple and Chicken Cheddar Melts

Apple Chicken Cheddar Melts




  • 8 slices of hearty bread
  • 4 Tablespoons butter, softened
  • 2 Tablespoons Dijon mustard
  • 2 cups pulled rotisserie chicken 
  • 1½ cups grated sharp cheddar cheese
  • 1 apple, cored and cut into matchsticks
  • 1 cup shaved Brussels sprouts
  • 1 Tablespoon lemon juice
  • ½ teaspoon salt


Top four slices of bread with mustard. Evenly distribute cheese and chicken onto each slice.

Toss apple and Brussels sprouts with lemon juice and salt in bowl. Distribute among sandwich slices then top with remaining bread.

Spread outsides of bread with butter and cook in buttered cast iron skillet or grill on a panini press.
