Tartes Flambée

Here’s a light, satisfying dish that’s perfect for summer.  A tarte flambée is a flatbread from the Alsace region of France. It’s a perfect base for your favorite flavors and an inspired way to use whatever’s left in your fridge or growing in your garden.

Tailor your tarte to the time of the season. In early summer, you can finish off last year’s pickles before the next bushel of cucumbers comes in. In mid-summer, take advantage of bountiful veggies — fresh from the garden or the co-op shelves. As the season cools down, it’s time to use those beautiful red peppers on the vegan shawarma-inspired tarte flambée.
