Smoky Shrimp & Cauliflower Skewers

Deep down, Minnesotans have a special bond with snacks on sticks. Our summer love for the convenience of utensil-less eating doesn’t have to end when the snow falls. There exists a secret weapon for the host/ess with the most/ess; skewers. The skewer is the cousin to the stick we know and love, but skewers can be served at dinner parties, and are tré presentable to guests. Make no mistake, a skewer is not a stick, but a vehicle to enjoy fancy snacks without using your hands.

Creating memorable morsels for all dietary needs can be tricky, that’s why we paired shrimp and cauliflower together to carry the same flavors for all food preferences. Both can be bite sized, and are mild enough in flavor to be elevated with basic ingredients like lime & paprika. This simple recipe takes about 25 minutes from start to finish, and the results are skewers of small bites with big flavor.

 

Smoky Shrimp & Cauliflower Skewers

Ingredients

Juice of 2 limes


3 tbsp olive oil


1 tbsp smoked paprika


1 tsp salt


1⁄2 1 tsp pepper


24 peeled shrimp, tails on; OR 1 head cauliflower, broken into florets


6 skewers, soaked in water


 

Directions

  1. Toss shrimp or cauliflower in lime juice and oil.
  2. Thread pieces on each skewer, sprinkle with paprika, salt and pepper.
  3. Roast on parchment-lined baking sheet at 400° for 8 minutes (shrimp) or 20 minutes (cauliflower).
