Rotisserie Chicken and Spinach Pasta


2 Tbsp butter

½ cup diced red onion

2 cloves garlic, minced

Salt and pepper

3 cups pulled rotisserie chicken

1 ½ cups cream

½ cup grated parmesan cheese, plus more for garnish

Juice from 2 lemons

1 – 5 oz box fresh spinach

8 leaves fresh basil, thinly sliced

1 package Sunrise Butternut Squash Fusilli



In a large skillet heat butter over medium heat. Add onion and garlic; season with a bit of salt and pepper and sauté 5 minutes. Add chicken, cream, ½ cup Parmesan and lemon juice. Stir to combine and bring to a boil, simmer for 5 more minutes. Add spinach and stir just to wilting. Taste and season with more salt and pepper.

Cook pasta according to package directions. Add to a large bowl and top with chicken mixture. Garnish with additional Parmesan cheese and fresh basil.
