Quick and Simple Minnesota Take-Along Dishes That Will Wow the Potluck

We gathered our favorite potluck dishes and gave them a Minnesota spin. These three take-along dishes use simple ingredients and are quick to assemble—Hope you made enough for everyone to have seconds!

 

(Local) Tempeh Sloppy Joe’s

Ingredients 

  • Tempeh Tantrum
  • Triple Crown Classic BBQ sauce
  • Breadsmith Slider Buns

Suggested Extra Toppings

  • Gunsmoke Coleslaw from Lakewinds Deli
  • Spirit Creek Purple Sauerkraut
  • Any vinegar-based coleslaw
  • Pickled vegetables

Crumble tempeh into a pan and heat, then cover with desired amount of sauce. Spoon onto toasted buns, add desired extra toppings, top with other bread half and spear with a toothpick.

 

Minnesota Sushi

Ingredients

  • La Quercia Prosciutto (or swap for a vegetarian option below)
  • Organic Valley Neufchâtel 1/3 Less Fat
  • Gyst Golden Beets or Bubbie’s Kosher Dill Pickle

Suggested Swaps

  • Whole wheat tortilla or lettuce for vegetarian options
  • Wide-sliced zucchini pieces

Lay down two slices of prosciutto and overlap their edges slightly. Apply neufchâtel all over prosciutto layer. Line one edge with pickle or beet filling (blot them dry on paper towel) and begin to roll up. Then slice and stick with toothpick to hold!

Tip: Remove neufchâtel from refrigerator 30 minutes prior so it’s soft and spreadable.

 

No-Bake Peanut Butter Icebox Pie

Ingredients

  • 1 graham cracker crust
  • 1 egg white
  • 1 cup creamy peanut butter
  • 9 oz. True Whip
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1/3 cup milk
  • Peanut butter cups from bulk

Suggested Swaps

  • Gluten-free crust
  • Chocolate Coco Whip
  • Nuts or coconut flake topping
  • Dark chocolate mini chips topping

Directions

Preheat oven to 350 degrees. Put 1 egg white in pie crust and roll it around to coat the graham cracker crust. Dispose of extra egg white, and bake for 5 minutes–Be careful not to overcook (this helps the crust hold its shape). Mix peanut butter and cream cheese well in a bowl. Add powdered sugar, milk, and fold in whipped topping until it is a consistent mixture. Spread pie mixture into cooled crust, cover and freeze overnight. Let thaw for 30 minutes before eating.

Tip: avoid super oily peanut butters
