Gorgonzola & Bacon Stuffed Mushrooms

These stuffed mushrooms are sure to be a hit at your next gathering. Their small size offers a pop-in-your-mouth convenience and they also tend to hold together a little better than the big, ooey-gooey ones. Make a lot, they’ll go fast!


1 8oz. package of crimini mushrooms

1 tbsp butter

3 strips Beeler’s bacon, cooked and crumbled

2 tbsp chopped scallions or chives

3 oz. cream cheese, softened

3 oz. crumbled gorgonzola

1/3 c. bread crumbs



Chop and saute mushroom stems in butter for 5 minutes.

Combine bacon, scallions, cream cheese, gorgonzola and bread crumbs.

Stuff into mushroom caps, place in greased baking dish and bake at 350° for 15 minutes.
