Brussels Sprouts Salad

Thanksgiving is a day of feasting at its finest. Lighten up the the fare and cut through the richness of other dishes with this simple and delicious salad.


1 pound brussels sprouts, shaved

1 apple, thinly sliced

1 small red onion, thinly sliced

1 cup chopped toasted walnuts


Dressing:  1 tablespoon Dijon mustard, 1 tablespoon maple syrup, 3 tablespoons apple cider vinegar, 1 teaspoon fresh thyme leaves, ½ cup olive oil, ½ teaspoon salt, ½ teaspoon pepper.


Place salad ingredients in large bowl.  In a ½ pint mason jar, combine dressing ingredients, cover tightly and shake well.  Pour over salad and toss well.
