Honey-Glazed Plantains
Crunchy and sweet, fried plantains are a great side for warming and spicy dishes, like spiced beef pot roast. They're also a wonderful addition to an appetizer table or game day snack spread.
Ingredients
- 3 ripe plantains, mostly black or dark yellow with black spots
- 3 Tablespoons coconut oil
- 2 Tablespoons honey
- Pinch of sea salt, optional to taste
Instructions
Peel the ripe plantains and slice them into rounds about ¼ to ½ inch thick. In a large sauté or frying pan, heat coconut oil over medium heat. Once hot, add plantain slices in a single layer, being careful not to crowd the pan. Work in batches if necessary. Fry for 2–3 minutes per side or until golden brown.
Remove the fried plantains and place them on a paper towel-lined plate to drain. Carefully pour off the excess oil, leaving about 1–2 Tablespoons in the pan. Reduce heat to low. Add the honey to the remaining oil in the pan and stir gently until it becomes a light amber color, about 30–60 seconds. Be careful not to burn it.
Quickly return the fried plantains to the pan and toss them in the honey glaze until evenly coated. Turn off the heat. Sprinkle with salt to balance the sweetness, if necessary. Serve immediately.
