Herbed Hummus

Herbed Hummus

Veggies and hummus make a delightful snack, side dish, or full platter appetizer. Simply blend chickpeas and herbs in your food processor for a flavorful dip that’s ready in no time.

Ingredients

  • ⅓ cup fresh cilantro
  • ¼ cup fresh curly parsley
  • ¼ cup fresh chives
  • ¼ cup fresh dill, optional
  • 6 cloves fresh garlic, minced
  • Juice of two small lemons
  • 2 cans chickpeas
  • 2 Tablespoons olive oil, plus more to drizzle
  • 2 teaspoons salt
  • Pepper, to taste
  • Vegetables of choice for serving, such as bell peppers, cucumbers, broccoli, carrots, radishes

Instructions

Mince half of each herb amount and set aside. Put the rest in a blender or food processor along with the lemon juice and garlic and pulse until a paste forms, making sure to scrape the sides.

Add the chickpeas and olive oil and pulse until smooth and the herbs are evenly incorporated.

Remove the hummus from the blender/processor and stir in the minced herbs. Add pepper to taste and drizzle with olive oil. Serve with slices of your favorite raw vegetables.
