Russian Cream
This silky-smooth cream dessert is simple to make, but beautiful in presentation. Perfect for a holiday dessert, having friends over, or a special night in.
Ingredients
For the cream
- 2 cups whipping cream, divided
- 1 Tablespoon plus 1 teaspoon vanilla, divided
- 1 cup sugar
- 2 ½ teaspoons gelatin
- 2 cups sour cream
For the fruit sauce
- 2 cups frozen berries
- ⅓ cup sugar
- 2 Tablespoons water
- Fresh berries, for garnish
- Mint leaves, for garnish
Instructions
First, make the fruit sauce. Combine frozen berries, sugar, and water in a sauce pan and bring to a boil. Add to the bottom of six individual serving cups and refrigerate.
Next, make the custard cream. Heat 1 ½ cups cream, sugar, and vanilla until the sugar is dissolved and the cream has a low simmer. Add the gelatin to the remaining ½ cup of cream and stir until it’s softened. Remove the saucepan from heat, then add the cream-gelatin mixture and whisk until the gelatin is dissolved. Add the sour cream and 1 Tablespoon vanilla and stir until completely blended. Pour evenly into small serving cups (6 to 8 cups) and refrigerate for 3 hours or overnight until set. Top with fresh berries and a mint leaf just before serving.
