Creamy Meyer Lemon Dressing
Yield 1 cup
Ingredients
- 1 shallot, diced
 - ¼ cup Meyer lemon juice
 - pinch of coarse salt
 - ¼ cup extra-virgin olive oil
 - ½ cup whole milk, Greek style yogurt
 - Freshly ground black pepper, to taste
 
Instructions
Put the shallot, lemon juice, and a pinch of salt into a small bowl and allow to stand for about 5 minutes. Whisk in the oil, then the yogurt. Season with salt and freshly ground black pepper.
