Vegetable Marinara Sauce

Ingredients

  • 2 Tablespoons olive oil
  • ½ cup chopped onion
  • ½ cup chopped carrot
  • 2 cloves chopped garlic
  • 8 oz. chopped mushrooms
  • ⅛ cup dry white wine
  • 3 cups thinly sliced kale
  • 1 28 oz. can crushed tomatoes
  • 1 15 oz. can tomato sauce
  • 1 teaspoon dried oregano
  • Salt and pepper

Instructions

In medium pot, heat olive oil over medium heat. Add onion, carrot, and garlic and sauté for 10 minutes until just starting to soften. Add mushrooms and sauté 5 more minutes.  Add wine, simmer for a few minutes. Add kale, tomatoes, and oregano and season with salt and pepper.  Simmer on medium low until vegetables are tender. Serve over your favorite pasta or zoodles.
