Baked Turnip Fries with Vegan Garlic Aioli

Looking for a fresh twist on fries to go with your burger? Try these baked turnip fries with a creamy garlic aioli.

Ingredients

  • 5-6 turnips 
  • 2 Tablespoons olive oil
  • ½ teaspoon salt
  • 1 teaspoon crushed black pepper
  • 1 teaspoon za’atar or celery salt
  • ½ teaspoon chili powder, optional
  • Chopped rosemary and flaky salt, optional, for garnish

For the aioli

  • 1 14-oz. package silken tofu
  • 1 teaspoon salt
  • 2 Tablespoons apple cider vinegar
  • 1 teaspoon minced garlic 
  • ¼ cup neutral oil, such as avocado, canola, or grapeseed oil

Instructions

Preheat the oven to 380 F. Peel turnips and cut them into uniform, long pieces that look like fries.

Place them in a bowl and add the olive oil, salt, black pepper, za’atar or celery salt, and chili powder. Toss well until turnips are evenly coated. Cover and set aside for 15 minutes.

Roast in the oven for 25 to 35 minutes, checking the fries every 5 minutes for doneness after 25 minutes.

Meanwhile, make the aioli. Add tofu, minced garlic, apple cider vinegar, and salt to a blender and blend until nice and fluffy, about 30 seconds. Add the oil and blend again until the aioli is whipped and smooth.

When the fries are done, sprinkle with chopped rosemary and flaky salt if desired and serve with the aioli for dipping.
