Festive Sweet Potatoes
Who says sweet potatoes need marshmallows? This recipe has raisins, apples, and honey, so you get all the sweetness to balance out the savory mains — but with a fresh twist!
Ingredients
- 4 sweet potatoes, diced in 1-inch cubes
- 1 tart baking apple such as Granny Smith, Zestar, Honeygold or Haralson, peeled, cored and diced
- ½ cup frozen cranberries, chopped
- ½ cup raisins
- 2 Tablespoons honey
- ½ cup orange juice
- 1 teaspoon sea salt, to taste
Instructions
Lightly oil a 9 x 12 baking dish. Add the diced sweet potatoes evenly to the dish, then evenly top with the apples, cranberries, and raising. Drizzle with the honey and orange juice and sprinkle with salt. Cover and bake at 300° until tender, about 40-45 minutes.
