Start with 1 cup of honey poured into a jar or container that has a lid. Choose the infusion recipe you prefer, stirring the spices, herbs, or flowers into your honey. Let the jar sit in a cool spot out of direct sunlight for up to 1 week, then strain out the inclusions.
If you’ve used dry ingredients only, your infusion should be shelf stable up to one year. If you use any fresh ingredients, such as fresh garlic or ginger, you can store it in the refrigerator for up to two months.
Dollop honey into your favorite mug, add warmed water, sweeten to your preference, add fresh lemon if you like, and enjoy!
