Grilled Cheeseburger with Kimchi on a Bun on a Dark Plate

Co-op Burger with Kimchi

Yield 4 servings

This juicy burger brings a kick that’s balanced by melted cheddar. Adjust the kimchi and chili crisp per the taste buds at your table — are they “Minnesota spice” or “can handle spice”? — for a crowd-pleasing, flavorful burger.

Preheat grill to high heat. Alternatively, preheat neutral oil in a cast iron skillet over medium-high heat.

In a large bowl, mix the ground beef, scallions, chili crisp, salt, and pepper. Mix by hand until ingredients are just blended. Form 4 or 5 patties, about ¾ inches thick and 4 inches wide.

Heat the butter in a cast iron skillet over medium-high heat. Once butter is bubbling, add the onions and stir to coat. Once the onions begin to get soft, reduce heat to medium low and cook, stirring occasionally, for 30 to 45 minutes until caramelized. Remove from skillet and set aside. While onions are caramelizing, preheat grill to high heat. Alternatively, you can use the skillet by adding the neutral oil and heating to medium high.

Once grill or skillet is hot, add the patties. Give each patty a good press with a spatula to get them evenly flat. Cook for 4 to 5 minutes, then flip and cook an additional 4 minutes, or until desired doneness. Internal temperature should be at least 160° before removing from grill.

Put one slice of smoked cheddar on the bottom of each bun, layer with a patty, then top with 1 Tablespoon each of kimchi and caramelized onions and serve.
